we did manage to tear ourselves away from the beach for a few hours and take an authentic mexican cooking class.  i can't even begin to describe what a fun and delicious experience this was. we were welcomed into the home chef claudia and she detailed all the basics of mexican cooking.  a talk on peppers (their different levels of spicy), to fresh salsas, clay cookware, and mexican tradition.  i am so thrilled to share these recipe's with friends.  do not worry.  fiesta planning is in the works.

the day began as chef claudia welcomed us into her home with little mugs of mexican coffee.  it tastes kind of like a mixture of chai tea and weak coffee.  not my favorite, but i was happy to try!

chef claudia taught us to make salsa using a mortar and pestle.  it really brings out the flavors and i love the consistency.

i am obsessed with sopes.  these delicious little corn bowls were hand fried and stuffed with beans, chorizo, sour cream,. and queso fresco.

Final product.  We got the recipe's for everything.  Chicken in a mole sauce, cactus salad, vermicelli noodles with mexican spices, classic refried beans, guacamole and handmade tortillas

Oh, and Claudia had the cutest dog ever.  His name was buddha and I couldn't resist...

back to business

and i'm back & it is officially spring time. what a difference a week of sunshine and relaxation can make.  i'm ready to kick off the spring/summer season with a smile and a tan :)

the weather was absolutely gorgeous.  80 degrees, sunny and a breeze - heaven.  waking up and sitting on the balcony with a cup of coffee, my mom and this view is something that i will never take for granted.

this was the first time we stayed at our new time-share at the Westin Lagunamar.  the resort is absolutely stunning and the staff were amazing.  i cannot wait to go back next year!

let me just say that while lounging on the beach was priority numero 1, followed closely by eating delicious food.  of course in typical rixfam style we sought out indian food one evening.  elefanta was such a treat!  the restaurant was right on the water and the decor and food made for quite a fun evening.

while indian is always a favorite we were in mexico and probably ate the best mexican food of my life every other night. fresh salsa's, fish tacos, margaritas - you name it, we ate it.  our favorite was a local hole-in-the-wall spot called the fish fritanga

can you ever get enough pico & guac? i think no.

oh mexico...

sorry to leave you in the cold this friday, but my brain is focused purely on impending vacation and wearing nothing but a bathing suit & fedora all week long.

i will be here, and only here all week long.

because i am giddy with excitement and i can't wait to see my family, i've strayed from my normal indie tastes in music and have the following on repeat today:  James Taylor - Mexico, Weezer - Island In The Sun mostly because they remind me of all the rixfam vacations of yore.

fun fact: my sister and i were (am?) obsessed with the Olsen sisters and convinced my parents to take us to The Atlantis in the Bahamas for Christmas one year, a la Holiday In The Sun (classic)  This said trip also began our obsession with Weezer and a brief experimentation with choker necklaces...
